Pistachio Bombs

For all the Pistachio fans out there, this one’s for you. I happen to love pistachios as well as cashews. Cashews are abundant in Kerala but pistachios not so much at least when I was growing up. Only after I came to the US, I tasted pistachios and I loved it. I love playing with my spices. I try to bring in flavors through spices in my food even if its a dessert. Cardamom is one of the flavors that is used in desserts in Kerala. In this recipe, I have used cardamom along with the nuts and it’s a snack/dessert that you can have on the go. The natural oils that is released from the pistachios is so flavorful when combined with cashews and fresh blueberries and not to mention dates! Dates are one of my go to favorite snacks and this is a key ingredient in these bombs. Yes, I call them Pistachio bombs since it’s an explosion of flavors in your mouth and you feel happiness in your mind. I like to create a happy mind through amazing food.
