Mini Uttappam bites are a mini version of dosa(rice and lentil crepe) served as a breakfast item in South India. They are very cute and delicious as an appetizer. Here I have topped it with coconut chutney and ghee roasted black mustard seeds.

 

Mini Uttappams bites Or Gluten free savory veggie pancakes

Ingredients:-

6 cups dosa batter

1 cup chopped cilantro leaves

2 carrots grated

1 beet grated

Safflower oil -few drops in each

 

 

Method:-

  1. Pour a ladle of the batter onto a medium size hot griddle, add in 1 tbspn of carrots, beets and cilantro leaves. Cook for a few minutes until bubbles appear on top. Flip it to cook the other side. Add in a few drops of safflower oil for crispy sides. Cook for another 2-3 minutes and its ready to be served.

 

Variations

  1. Pour 3 ladles of batter onto a bowl. Add 1/2 cup cooked beetroot puree and mix well. Keep aside.
  2. In another bowl take 4 ladles of batter. Keep aside.
  3. Heat griddle on medium heat. Once hot, add in 1 ladle of regular dosa batter. Immediately add drops of 1/2 a ladle beet dosa batter on top. Using a toothpick swirl it around to make a pattern. Cook until you see bubbles on top. Flip it to cook the other side.
  4. Once cooked, shape it to your desire using a cookie cutter. Top if with your favorite chutney and enjoy!
