Broccoli Stir-fry with my homemade spice mix

Broccoli is a fantastic vegetable which is highly rich in vitamins and minerals and its a favorite vegetable in my home. I cook broccoli at least once a week. I steam it, saute it, and mash it too but I love to spice it up with some of my homemade spice mix to enhance the flavor. I saute the broccoli with this gorgeous onion-tomato mixture and when combined with rice, its heavenly.

Ingredients Amount
Broccoli 4 cups
Coconut oil 2 tbsp
Roma tomatoes, chopped 2 cup
Red Onions,sliced 1 1/2 cups
Ginger paste 2 tbsp
Garlic paste 2 tbsp
Serrano chilli paste 1 tsp
salt 2 tsp
turmeric powder 1/2 tsp
kashmiri chilli powder 1 tbsp
my spice mix (recipe below) 1 tsp
Fresh cilantro, chopped 1 cup

Method

Heat coconut oil in a medium size pan and add sliced red onions, salt and saute it well till light golden brown.

Add in the ginger garlic green chilli-paste and fry it for 30 seconds and then reduce the heat.

Now add in the spices- salt, turmeric, kashmiri chilli powder and my spice mix and stir for 10 seconds.

Add in chopped tomatoes and mix well. On low heat, cover and cook until the tomatoes are well combined and cooked through.

Now add in chopped cilantro leaves and combine well.

Add in the broccoli florets and stir well. Lower the heat, cover and cook for 3-4 min or until the broccoli is cooked but still has a bite to it.

Stir gently to combine and serve hot with steamed rice.

My spice mix– combine 2 tbsp coriander seeds, 1 tbsp black pepper seeds, 1/2 a piece of mace, 1 tspn fennel seeds, 1/2 inch cinnamon stick, small piece of bay leaf and 2 cloves. Dry grind these and store it in an airtight container.
